Tasty Cabbage and Zucchini Fritters!

Ingredients

  • 2 cups of shredded cabbage
  • Zucchini: 2 cups grated & coarsely chopped; onion: 1 small, chopped
  • 2 cloves of garlic, minced
  • 1 and 1/4 cups fresh parsley, chopped
  • (Optional) 1/4 cup grated Parmesan cheese & two large eggs
  • 2/3 cup breadcrumbs
  • 1/4 cup wheat flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika when cooking
  • (Optional) 1/4 teaspoon ground cumin
  • A few teaspoons olive oil (for frying)

Step-by-Step Directions

Part One: Prepare the Veggies

  • Grate the zucchini & shred the cabbage.
  • Squeeze out any extra moisture from shredded zucchini using a clean kitchen towel. This step is important to keep patties together!
  • Chop onion & mince garlic, then mix grated zucchini, shredded cabbage, and chopped parsley in a big bowl.

Part Two: Mix All Ingredients

  • Add Cheese & Eggs: Toss the vegetable mixture with eggs, and if desired, add grated Parmesan cheese. Mix carefully.
  • Combine Dry Ingredients: Add flour, breadcrumbs, salt, pepper, paprika, and cumin powder (if using). Stir until the dough forms into one ball when squeezed.

Part Three: Shape Patties

  • Form Patties: Make small patties from the mixture, about three inches wide each. Use your hands to shape them well so they stay together by pressing down firmly.

Part Four: Cooking Patties

  • Heat Oil: In a large pan, heat two or three tablespoons of olive oil on medium heat.
  • Fry Patties: Carefully place patties in the skillet without crowding them. Cook for three to four minutes, turning once until golden brown. Cook in batches to avoid overcooking.
  • Transfer cooked patties onto paper towels to soak up any excess oil.
