Grandma’s Cold-Weather Favorite”: Only 4 ingredients, and I make it again and again because it never disappoints.

This  soup is the definition of easy comfort food. Made with only four main ingredients, it uses the natural starch from the potatoes and the bold flavor of sharp cheddar to create a thick,  creamy soup—no roux or  heavy cream required.

4-Ingredient Cheddar Potato Soup

Ingredients:

  • Potatoes, peeled and diced – 4 cups
  • Milk (whole milk works best) – 4 cups
  • Sharp cheddar cheese, shredded – 2 cups
  • Butter – 2 tablespoons
  • Salt and black pepper – to taste (optional)

How to Make 4-Ingredient Cheddar Potato Soup:

Step 1: Cook the Potatoes
Add the diced potatoes to a medium pot and cover with water. Bring to a boil, then lower to a simmer and cook for 12–15 minutes, until the potatoes are fork-tender.

Step 2: Mash
Drain the potatoes, reserving about ½ to 1 tablespoon of the cooking liquid in the pot. Gently mash the potatoes, leaving some small chunks if you like a bit of texture.

Step 3: Add Butter
Stir the butter into the hot potatoes until fully melted and evenly mixed.

Step 4: Heat the Milk
Pour in the milk and place the pot back over medium heat. Stir often and heat until steaming, but avoid boiling to prevent scorching.

Step 5: Add the Cheese
Lower the heat and gradually stir in the shredded cheddar, adding it in small handfuls. Keep stirring until the cheese is fully melted and the soup is smooth and creamy.

Step 6: Season and Thicken
Season with salt and black pepper if desired. Let the soup sit over very low heat for about 5 minutes so it thickens slightly before serving.
