Creamy Eggplant With Yogurt: A Melt-in-Your-Mouth Recipe the Whole Family Will Love

If you are looking for a simple homemade dish full of flavor, this creamy eggplant with yogurt recipe is a wonderful choice. Soft eggplant, lightly sautéed onion, garlic, butter, and yogurt come together to create a rich and comforting meal that pairs beautifully with toasted bread, pita, or a fresh salad.

This recipe is easy to prepare and perfect for a family lunch or dinner.

Ingredients

  • 500 g eggplants
  • 100 g melted butter
  • 1 medium onion
  • 1 garlic clove
  • Salt, to taste
  • Black pepper, to taste
  • 125 g yogurt

Preparation

While the water is heating, wash the eggplants well and remove the stems.

Using a fork, pierce the eggplants along their length. This will help them cook faster and soften more evenly.

Place them in a pot of boiling water and let them cook for about 15 to 20 minutes. Once they are soft, remove them from the heat and drain any excess water.

Transfer the cooked eggplants to a bowl and mash them with a fork. If you prefer a finer texture, you can also chop them into very small pieces with a knife.

At the same time, place the butter in a pan and let it warm up.

Peel the onion, chop it finely, and add it to the pan. Cook it gently, stirring from time to time, until it becomes soft and turns a light golden color.

Add the crushed garlic and cook for a little longer, stirring continuously so it does not stick.

Now add the mashed eggplant to the pan. Season with salt and black pepper according to your taste.

Let everything cook together for about 5 minutes, allowing the flavors to blend well. Taste the mixture and adjust the seasoning if needed. Then remove it from the heat and set it aside while you prepare the yogurt.

If you are using homemade yogurt, make sure to drain any excess liquid first. Then mix the yogurt into the eggplant mixture until everything is well combined.

Serve the dish warm, accompanied by toasted bread, pita, or a fresh vegetable salad.
