Instructions

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or two 8-inch round cake pans.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl, beat the softened butter and granulated sugar until light, pale, and fluffy. This step is important for creating a soft cake texture.

Add the eggs one at a time, mixing gently after each addition. Stir in the vanilla extract, lemon zest, and fresh lemon juice until fully combined.

In a separate bowl, mix the sour cream, vegetable oil, and buttermilk until smooth.

Gradually add the dry ingredients and the buttermilk mixture into the butter mixture, alternating between the two. Mix gently until a smooth, thick, and silky batter forms—do not overmix.

Pour the batter evenly into the prepared pan(s) and smooth the top.

Bake for 28–35 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

Allow the cake to cool completely before adding frosting.

How to Make Cheesecake Frosting

In a large bowl, beat the cream cheese and butter together until smooth and creamy.

Gradually add powdered sugar, beating until light and fluffy.

Mix in lemon juice, vanilla extract, and a pinch of salt until the frosting becomes silky and easy to spread.

Assemble the Cake

Spread a generous layer of cheesecake frosting over the cooled cake.

For decoration, add lemon zest curls, white chocolate shavings, or fresh berries on top for a beautiful finishing touch.

Serving Tip

This cake tastes even better after chilling for a short time, as the lemon flavor becomes more pronounced and the frosting firms up slightly.

Enjoy this rich, refreshing Lemon Vanilla Cake—soft, creamy, and absolutely irresistible.
