Italian Meatloaf Recipe

This Italian Meatloaf is a hearty, flavorful twist on classic comfort food. Made with juicy ground beef, Italian breadcrumbs, marinara sauce, mozzarella, parmesan, garlic, and herbs, this recipe brings together all the cozy flavors of an Italian-style dinner in one delicious loaf.

It is tender, cheesy, rich, and perfect for serving with pasta, mashed potatoes, roasted vegetables, or even sliced into a warm garlic bread sandwich.

Ingredients

For the Meatloaf

  • 2 lbs ground beef, 80/20 recommended
  • 1 cup Italian breadcrumbs
  • ½ cup milk
  • 2 large eggs
  • 1 medium onion, finely diced
  • 4 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ¼ cup fresh parsley, chopped
  • ¾ cup marinara sauce, plus extra for topping

Optional Filling Layer

  • 1 cup shredded mozzarella cheese
  • ½ cup marinara sauce

For the Topping

  • ½ cup marinara sauce
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons grated parmesan cheese
  • Fresh basil or parsley, for garnish

Instructions

Step 1: Soak the Breadcrumbs

In a small bowl, combine the Italian breadcrumbs and milk. Let the mixture sit for about 5 minutes. This helps keep the meatloaf soft, moist, and tender after baking.

Step 2: Cook the Onion and Garlic

In a skillet, heat a small amount of olive oil over medium heat. Add the finely diced onion and cook until soft and translucent. Stir in the minced garlic and cook for another minute. Remove from heat and allow the mixture to cool slightly.

Step 3: Make the Meatloaf Mixture

In a large mixing bowl, add the ground beef, soaked breadcrumbs, eggs, cooked onion and garlic, parmesan cheese, Italian seasoning, dried basil, dried oregano, salt, black pepper, and chopped parsley.

Mix gently with your hands or a spoon until just combined. Avoid overmixing, as this can make the meatloaf dense.

Step 4: Add Mozzarella and Marinara

Fold in the shredded mozzarella cheese and ¾ cup of marinara sauce. The cheese adds richness, while the marinara keeps the meatloaf flavorful and moist.

Step 5: Add the Optional Cheesy Center

For a stuffed version, place half of the meat mixture onto a lined baking sheet and shape it into a loaf. Add a layer of mozzarella and marinara sauce in the center. Cover with the remaining meat mixture and seal the edges well so the filling stays inside while baking.

Step 6: Shape and Bake

Preheat the oven to 375°F / 190°C.

Shape the meat mixture into a loaf on a lined baking sheet, or place it into a loaf pan. Bake for 45 minutes.

Step 7: Add the Topping

Remove the meatloaf from the oven. Spread marinara sauce over the top, then sprinkle with mozzarella and parmesan cheese.

Return to the oven and bake for another 20 to 25 minutes, or until the cheese is melted and bubbly and the internal temperature reaches 160°F / 71°C.

Step 8: Rest Before Slicing

Let the meatloaf rest for at least 10 minutes before slicing. This helps the juices settle and keeps the slices neat and firm.

Recipe Variations

Italian Turkey Meatloaf

Use ground turkey instead of beef for a lighter version.

Spinach and Ricotta Meatloaf

Add 1 cup sautéed spinach and spoonfuls of ricotta cheese for a lasagna-inspired meatloaf.

Spicy Italian Meatloaf

Mix in crushed red pepper flakes or chopped pepperoni for a spicy kick.

Vegetable-Packed Meatloaf

Add grated zucchini, carrots, or finely chopped bell peppers for extra flavor and moisture.

Pesto Meatloaf

Stir in 2 tablespoons of basil pesto for a fresh herb flavor.

Cooking Note

Do not press the meat mixture too tightly when shaping the loaf. A gently formed meatloaf cooks more evenly and stays juicier. Also, always let it rest before slicing to prevent crumbling and help the loaf hold its shape.

Serving Suggestions

Serve this Italian Meatloaf with spaghetti or fettuccine tossed in marinara sauce. It also pairs beautifully with mashed potatoes, creamy polenta, garlic bread, or roasted vegetables such as broccoli, green beans, or zucchini.

For a delicious leftover idea, slice the meatloaf and serve it inside toasted garlic bread with extra marinara and melted mozzarella.

Helpful Tips

  • Use 80/20 ground beef for the juiciest texture.
  • Do not skip soaking the breadcrumbs in milk.
  • Mix the meat gently to avoid a tough meatloaf.
  • Baking on a sheet pan helps the edges caramelize better than a loaf pan.
  • Add extra marinara during baking for a richer flavor.
  • Use a meat thermometer to make sure the center reaches 160°F / 71°C.

Final Thoughts

This Italian Meatloaf is comforting, cheesy, and full of classic Italian flavor. With marinara sauce, mozzarella, parmesan, garlic, and herbs in every bite, it is a perfect family dinner recipe that feels both familiar and special.
