The Best Pineapple Bake

If you’ve been following our recipes for a while, you’ve probably noticed that we’re big fans of pineapple around here. From savory main dishes to desserts and afternoon snacks, we believe that most things are made better with the sweet, tangy flavor of pineapple.

If you feel the same, then I’m confident you’ll love this Pineapple Bake just as much as we do! The sweet citrus flavor really shines in this dish. It’s perfect as a unique side dish—or serve it warm with a scoop of vanilla ice cream for an easy, crowd-pleasing dessert.

Ingredients

  • 1 (20 oz) can crushed pineapple with juice

  • ¾ cup sugar

  • 2 eggs

  • 2 tablespoons cornstarch

  • 2 teaspoons vanilla extract

  • 1½ tablespoons butter, sliced into pats

  • 1 teaspoon ground cinnamon

Preparation

  1. Preheat oven to 350°F (175°C) and grease a 9×9-inch baking pan.

  2. In a large bowl, combine the crushed pineapple (with juice), sugar, eggs, cornstarch, and vanilla. Mix until well combined and smooth.

  3. Pour the mixture into the prepared baking dish.

  4. Top with butter pats, evenly spaced, and sprinkle the cinnamon over the top.

  5. Bake for 45 minutes, or until the edges are golden and the center is set.

  6. Let cool slightly before serving. Enjoy warm or chilled!
